Angelenos have been anxiously awaiting the opening of New York pastry chef Dominique Ansel’s new Los Angeles location, and the big day is almost here; 189 by Dominique Ansel will open at the Grove on November 3, and to celebrate, the restaurant just dropped a sweet description of its first L.A. Cronut.
“Our first-ever #LA Cronut® at @DominiqueAnselLA will be White Peach Amaretto with Muscavado Sugar, filled with white peach amaretto jam and muscavado ganache,” the restaurant’s bakery announced Thursday via Instagram. Muscovado sugar, according to The Food Lover’s Handbook, “is the finest brown sugar you can buy, with a higher molasses content than soft brown sugars,” and its known for having a stronger, more pungent taste than other brown sugars.
A little context: Ansel developed the Cronut at his bakery’s New York location in 2013, spurring a Grub Street write-up that quickly led to the donut-croissant hybrid becoming the food world’s most sought-after treat. A Cronut pop-up briefly graced the Grove in 2014, but 189 by Dominique Ansel will turn the former site of Morel’s French Steakhouse into a full-service restaurant and bakery.
It’s nice to see that the bakery will make peach the focus of its first L.A. Cronut, resisting the temptation to stuff it with avocado or poke or any other overdone Southern California-associated food trend. (Although, to be fair, we have been known to indulge in a sushi croissant from time to time.)
Dominique Ansel Bakery’s new location at the Grove will be open for business starting at 9 a.m. on November 3, so plan accordingly, pastry hypebeasts. Based on past Cronut-incited pandemonium, we’re predicting it will look something like a Soviet bread line, except everyone will be frantically Instagramming.
