The Linq’s $5 million Chayo Mexican Kitchen and Tequila Bar will feature multiple bars, indoor and outdoor seating, 60 different tequilas, live DJs, and their house mascot, Chayo, a mechanical bull.
Chef Ernesto Zendejas is heading up the substantial, two-story, 12,400 square-foot space that can accommodate 450 guests. The concept is described as a “wildly intoxicating environment.”
Expect an upscale casual approach to the Mexican menu including fish tacos, honey chipolte salmon and mole poblano Portobello. Chef Zendejas was previously the executive chef at the La Hacienda de San Angel within the Mexican Pavilion in Orlando’s Epcot Theme Park. He first encountered a mechanical bull in a restaurant setting during his stint as chef at Tequila Ranch at the Seminole Hard Rock Hotel & Casino.
Current plans call for riders who can sustain a sixty second ride on Chayo to have their pictures posted to an online Hall of Fame.
Chayo Mexican has the advantage of unobstructed views of the 550-foot tall High Roller observation wheel and The Linq promenade, also home to a forthcoming Yard House and The Tilted Kilt Pub & Eatery. A winter debut has been penciled in by the restaurant.
