Caruso’s is Rosewood Miramar’s fine dining restaurant and both the menu and the striking cliffside views are a love letter to the California coast. Almost all of the seafood is sourced locally here — make sure to try the legendary Santa Barbara uni, rated one of the best in the world served with gnocchetti pasta and confit tomato. On the menu you’ll see that the main ingredient is referred to as Stephanie’s uni, as the property works with a local diver to truly get the freshest product out there. Another tasty seafood appetizer is their octopus which is served with a molé sauce and potatoes, which gives the delicate ingredient a flavorful and bold spin. Other must-try dishes on the menu are the carbonara, the dry-aged duck and the honey-based dessert which uses honey from the property’s own beehives. Caruso’s thoughtful food practices earned them a Michelin Green Star for sustainability.

Very soon Caruso’s will also have a very exciting collaboration with New York City three Michelin star restaurant Eleven Madison Park. From June 30 to July 1 Chef Massimo Falsini and Chef Daniel Humm will collaborate on a plant-based experience celebrating the wealth of ingredients California’s Central Coast has to offer.

Sampling the Flora at the Spa

Visiting the property’s Sense® Spa is another moment to immerse yourself in the regional vegetation as their treatments utilize the local flora. One of these treatments is the Montecito Sage Purification which uses the herb to create a relaxing, multisensory experience. After settling into one of their plush heated treatment beds, you’ll experience a rejuvenating scrub using salt minerals, indigenous sage, pine and juniper to slough off any dead skin. This is followed by a cozy wrap and then a full body massage during which you can enjoy the scent of sage oil applied to your body. The massage also uses heated stones to further help your muscles and mind unwind.
